The cattle are raised by third generation farmers in Western Queensland on Certified Organic fertile pastures among abundant wildlife and diverse landscapes. Our farmers consider themselves stewards of these animals and vast grasslands, and have never treated their cattle with antibiotics or added hormones - ever!

These vacuum sealed whole pieces come to you fresh, not pre-frozen. They have a refrigerated shelf life between 4-6 weeks if unopened.

Upon opening, we recommend to consume within 2-3 days for ultimate freshness, although it can last in the fridge in an airtight container or wrapped well for approx. 3-5 days.

Recommend slicing or preparing your meat and sectioning it into portions before freezing. It will last in the freezer for up to 6 months.

Leave this rack whole and bake in the oven until your desired doneness, allow to rest then sear in a scorching hot pan or bbq grill before serving. For individual pieces, simply cut into steaks. 

Serve with your favourite sides. Honestly, this cut needs no partners. A bit of flakey salt or your favourite compound butter and enjoy!
